No-Bake Energy Bites
Makes 10 servings
1 cup oats
1/2 cup mini chocolate chips
2/3 cup organic unsweetened coconut flakes, toasted
1/2 cup natural creamy peanut butter
1/3 cup pure honey
1 tablespoon pure maple syrup
1/4 cup ground flax meal
1 tablespoon whole flax seed
1 tablespoon chia seeds
1 teaspoon vanilla extract
Pinch of salt (optional)
Toast coconut until golden brown in a fry pan over medium heat and set aside to cool (no oil needed). Mix all ingredients together in a large bowl and chill in fridge for at least 30 minutes.
Remove from fridge and roll mixture into balls, about 1-inch in diameter (makes about 15-20). Store in airtight container in fridge for up to a week.
