Recipes Breakfast Egg & Spinach Sandwich

I have never been fond of cooked spinach and it’s probably because of the dreadful experience I had as a child.  My mom would make this stuff she called “spinach” but it never looked like spinach, it looked more like a green/brown gue and then she put vinegar on it – Disgusting on so many levels!  For years I thought I hated spinach but one day a friend made me a salad which had spinach in it and then I tried a Quiche made with spinach.  My thoughts and distaste for spinach started to change as I tried more and more recipes that had spinach in them.  Can I sit down and have a side dish of just cooked spinach with vinegar or sprayed with olive oil, oh heavens no, but I do like it raw in salads and when it’s cooked in a recipe.

So my advice to you, if you ever had spinach as a child or any vegetable for that matter, don’t let that bad experience hold you back from enjoying something that you might actually like.  Who would have ever thought I would like spinach mixed with my eggs?  Well this easy recipe is so, so good and I was amazed when I saw something like it advertised on TV recently.  Give my egg and spinach sandwich a try and see what I mean.   Enjoy!!!    For comments/questions email  ramona@lowfatdivablog.com

Egg & Spinach Sandwich

spinach egg sandwich

½  cup  baby spinach leaves

½  cup  cholesterol-free egg product

Dash  black pepper

1  multi-grain English muffin, split, toasted

1  KRAFT 2% Milk Singles

Saute’ the spinach in nonstick skillet on medium heat 1 min. or until spinach starts to wilt.

Add Egg Beaters and pepper; cook and stir 1 to 2 min. or until soft set. Fold in half. Set slice of cheese on top to melt/soften and wait a couple of minutes.

 Place the egg on toasted muffin, bagel or sour dough bread.
